I had this awesome meal planned for tonight, but my body apparently had other plans...

I thought I'd read a little when I got home and fell asleep. Woke up 10 minutes ago.

Yeah, that's cole slaw and cheese and crackers.

Oh well, there is always tomorrow!

what christina cooks.

So I had an idea...

I love to cook. Anyone who knows me knows how much I love to do it. (Ok, get your mind out of the gutter. I'm still talking about cooking...). I also love photography. I take pictures of EVERYTHING, especially my food. I make my dinner, take a pic if it's looking particularly appetizing and usually post it on Facebook.

I always seem to get positive comments along with recipe requests, so I figured, why not add it to my blog??

Now these recipes should be pretty easy. I work a lot and Mr. Mc has no idea how to cook, so I do all the cooking. Sometimes I get home very late. I cheat everything I can because in all reality, I'm kind of lazy like that. These recipes will use common ingredients and be pretty easy, but taste really freaking good.

So here you go. The first installment of what christina cooks. I hope you enjoy!

Feta Pasta

My original plan was to make a quiche, but Mr. Mc didn't want to wait that long to eat, so I had to make up something else. This is what I got...

Very simple ingredients...




1. Box of Pasta (any kind will work), cooked according to the box. Now, if you can't boil water and cook pasta, (you know who you are, cough:Sabe:cough) you might be SOL.

2. About 1-2 ounces of Feta cheese. Now I like the organic Whole Foods kind, but I'm kind of snotty like that. Any kind will do. You can even cheat it up and use the crumbled. Also, I say 1-2 because it really is to taste. Some people don't like too much and it is a strong cheese, so it can be overpowering.

3. Bag of Spinach. I prefer fresh because it tastes better, but you can use frozen too. Just cook it in the microwave first and drain out all the water.

4. Garlic to taste. I use 1 really large clove or a few small ones. Mince it up. Again, this is too taste. Mr. Mc doesn't like too much...

5. 2 TBSP Olive Oil.

6. 2-3 TBSP Pesto. Again, this is to taste.

7. Salt & Pepper, to taste. Yeah, big surprise there.

How to cook this...

1. Cook pasta in a large pot of salted water. Be sure to salt the water every time you cook pasta. This is the only time you can truly season the pasta, so do it now. You don't need too much. A couple large pinches will do.

2. In a sauté pan heat the olive oil over medium-hi heat. When hot reduce to medium and add the minced garlic. Cook about 1 minute until it starts to soften and get more of a golden color, but not brown. With garlic brown=burnt.

3. Add the spinach. If using fresh, cook until wilty, about 2-3 minutes, or until it looks like the picture below. If using frozen, just heat through. When done, remove the spinach from the heat.




4. While waiting for the pasta to finish, chop up the feta cheese. Or as Mr. Mc says "cut the cheese" and then giggles, because yes, he's 12...




5. Drain the pasta once it's done and put back into the hot pot. Add The feta, spinach mixture and pesto back into the pot.




6. Now just mix the whole thing up serve. Yeah, not too difficult, but it sure looks like it is!




One piece of advice, presentation means a lot when cooking. Use smaller plates or bowls and space things in an artful way. It makes it look like you slaved away for hours to make this fancy dinner and you can usually get out of doing the dishes then...

Celebrating Jen.

I'm a few days late on this, but better late than never.

I lost my only sister 13 years ago and this time every year is no fun for my family and I. I am so happy that my wonderful friend Marisabel called me up and asked if we could hang out.  Misery loves company, but thankfully this company made me laugh, smile and drink probably a little too much...

Disclaimer.


Some days I may have a point.  Most days I won't.  

For some God-forsaken reason I'm still reading this crap.

This is not an April Fool's joke.  This is an actual model walking down an actual runway.  I'm sure you're thinking EXACTLY what I'm thinking...

I have unfortunately become addicted to these ridiculous fashion blogs.  I have stopped reading the stick insect/annoying kind and moved on to the ones that actually have some decent fashion sense.  I haven't quite made my mind up about a few though.  I'm not sure if these girls look like they belong on the pages of Vogue or have a staring role in Cirque du Soleil.

Stick insects.

I love Bridget Jones.  I love her disdain for the "stick insects".

We have all seen them.  These perfectly tall, perfectly thin girls.  You wonder how they won the genetics lottery.  Somehow, they are all rich too.  Bitches.

Anyway, I bring this subject up because I've been reading a few fashion blogs lately.  Yes, I know that's where I first went wrong, but I have good reason!  One of my goals for 2011 was to dress a bit more put together.  I wanted to invest in nice pieces, but find a way to stay current and keep my personal style, just updated.  

In my quest for inspiration, I found this great little blog, Cheetah is the New Black, and have been reading it.  Even though she seems to have it all (read post below) for some reason I find her cute and charming.  I feel like her style is close to mine and I can relate to her.  She lives in San Francisco, I like San Francisco!  She's a good match.  I even don't mind that she takes a photo of herself every day.  It's informative.  She posts what she's wearing so I can check it out, very nice thing to do.  I like it.  I like her.  But today I made a fatal mistake.  

I am hanging out in the office so I can "spend time" with Mr. Mc while he plays his video games.  Get your minds out of the gutter people.  It is this or sitting in the bedroom while he is in here.  I figure if we're in the same room at least it's like we are spending time together...

Ugh, tangent.  Where was I...Oh yeah, fatal mistake.  I decided since her blog is so nifty there might be others out there too!  I clicked the links on the side of her page.  I don't know if I'll ever be the same again.  It's blog after blog of some perfect looking girl who is no older than 25, I swear, with a PERFECT EFFING LIFE!!!  It's my worst nightmare come true!  All these girls look like freaking models.  They are also the most narcissistic group of people I have ever seen.  For real.  I mean, how many Chanel purses can one 19-year-old have...I hate them.  

Ok, so maybe there is a bit of the green monster in there but come on people!  I don't need to see 10 pictures of your outfit for the day.  I don't.  I wish I could unsee it.  It ruined my day.

Now I feel like Bridget Jones.  Annoyed by the perfect stick insects.  

On the upside, because I am the pollyanna of the group, I feel the need for the normal girl side of fashion.  I don't know, maybe I'll start forcing one of my friends to take a photo of me everyday and post it here.  But then again, maybe not.  I don't think you all need to see that.

I named mine Bob.  I do realize the ridiculousness of naming him Bob, since Mr. Mc's name is Bob.  However, I named everything before I met him Bob and really, why should I have to change?

Bob is my penguin.  He's always there for me.  He's always waiting and ready to make me a tasty cocktail to enjoy during "cocktail hour"...I heart him.

Cocktail hour.

When did Tom Cruise go crazy?  Remember when he made good movies and we actually wanted to see them?  Now his crazy overshadows his acting.  Damn shame if you ask me.

So we have started a little trend in my house from 7 PM - 8 PM every night that I am lovingly now referring to as Cocktail Hour.  I don't really know exactly what prompted Cocktail Hour, but probably a real shit day at work that drove me to drinking.  I thought it would be a one night deal, but I find myself wanting to channel my inner bartender every night and mix Mr. Mc and I up a few drinks.  I usually start with a shot, because hey, why not?  Haha, why not.  I always get a kick out of that.  Those of you who know me know exactly why.  I'll dive into that one later...

Anyway, I have come to enjoy and look forward to our cocktail hour.  What started with a few kinds of booze we thought we would mix together in the hopes of discovering a new tasty concoction has become a weekly trip to the ABC to pick up some new ingredient I need to mix up the next fun drink I found online.  Tonight I made a version of a Pina Colada.  I have to say, it's pretty good.  

What's my point here, I don't necessarily know if I have one.  I just seem to be enjoying an evening drink lately and thought I would share.  I hope this maybe inspires you to mix up a fun drink and enjoy.  I know I am right now.
